Brossties and Frickles. A hole new take on bagels

We’re very happy to welcome Bross Bagels to our Waverley Mall family. Their intriguingly named ‘Brossties and Frickles’ is the brand’s sixth outlet and will open in the former premises of Williams and Johnson Coffee Co, next to The Balmoral and opposite the Apple store, with Edinburgh Castle as its backdrop. It will serve a range of delicious brossties (their take on a toastie and bagel hybrid) complemented by a choice of frickles (fried pickles!) along with coffee and other treats.

Its cool interior, designed by Leith architecture studio GRAS, has a larger sit-in area and outdoor capacity than Bross Bagels’ other shops. Owner Larah Bross, who founded the chain in 2017, said: “When this opportunity came - to open at Waverley Mall, slap bang in the centre of Edinburgh, in such an amazing location - I couldn’t turn it down. We’re excited to continue our street food vibe, following the opening of Bross StrEAT in Leith, which has been a great success.”

At Moorgarth, we always aim to create a great atmosphere in each of our retail centres, which means incorporating just the right blend of brands. We believe Brossties and Frickles will be an excellent addition to Waverley’s rooftop area as it’s the perfect spot to take in the buzz of the city. It’s a brilliant new brand with a loyal following and we’re looking forward to working with Mama Bross to open it to a new audience.

We love collaborating with innovative businesses that are always looking to improve their customers’ experience. Brossties and Frickles will offer a brilliant online pre-order service allowing customers to order from the train or on route to the station. The team will have their bagels ready to collect at a chosen time, offering convenience to busy commuters.

The signing of Bross also ties in with our strategy of ‘local heroes’ and scalable new food destinations coming to Waverley as we evolve our new rooftop plans and commence development in 2021.
